Quick desserts

Strawberry cheesecake (decent fake)
250gms fruit
1cup cream
1cup hung curd
3/4cup sugar
200gms glucose biscuit crushed
3tbsp melted butter
1tbsp gelatin+4tbsp water
mix butter and crushed biscuits and layer it on the tin.
blend fruit+sugar.
blend above pulp+curd+cream.
melt gelatin and blend with above mix.
pour into the tin over the biscuit layer.
freeze overnight.

Choco balls
for 50 nos.
1cup groundnut powder
1long packet Marie biscuit
1cup cream
1/2cup sugar powder
2 tsp cocoa powder
dessicated coconut
mix all ingredients to make a dough.roll into balls the size of a ping pong ball .
roll these balls over dessicated coconut.
alternate milkmaid with cocoa powder .
add cream cautiously as this could make your dough soggy.

Pineapple vermicelli delight
1 cup vermicelli
1 cup pineapple diced and sugar sprinkled on top
1/2 cups coconut milk
1/2 cup sugar
4 tsp sugar +2 tsp water for carmelisation
Heat pineapple mix for 5 minutes
Toss vermicelli till mildly brown in ghee
Cook pineapple, vermicelli and coconut milk in closed container in a pressure cooker for 30 mins on simmer without the weight
Meanwhile, caramelise the sugar on a pan.
Pour the cooked matter on the caramelised and let it cool in the fridge until set stiff.
